One of the main reasons so many guests return to the 'The Castle' is because of the food. Graham Tinsley, Head Chef and partner is the Manager of the Welsh Culinary Team and as you can imagine, passionate about his food! Peter Lavin and Graham have worked together for over 18 years and have always shared the belief that a good hotel must have a good restaurant. Over the years they've succeeded to do that several times for other people and now they are doing it for themselves!

   
In the team in the kitchen, Graham has good company! Gareth Dwyer is the Second Chef, Gareth was Welsh Junior Chef of the Year in 2001; and James Williams is Junior Sous Chef. Both Gareth and James are also in the Welsh Culinary Team and have successfully competed in the Culinary World Cup and Olympics.
